It's no secret that cooking inside a small RV kitchen can be frustrating, but it doesn't have to be. Once you've compiled a list of simple and quick RV recipes, you can start cooking meals on the road faster than you can order a burger at the drive through. So before you give up on cooking inside your RV, create a cookbook with these easy dinner recipes.

Easy Chicken Casserole

What you'll need:

  • 4 boneless, skinless chicken breasts
  • 1 family-size box of rice/pasta mix (Rice-A-Roni works fine)
  • 1 small can mushrooms (rinsed and drained)
  • 1 large can green chiles (drained and diced)
  • 1 small can olives (chopped and drained)
  • 1 small container sour cream
  • 2 cups shredded Monterey Jack cheese

Cooking Instructions:

  1. Cook the chicken for roughly 15 minutes on each side. Make sure the breasts are thoroughly cooked through, then cut them into bite-size pieces.
  2. Cook the rice/pasta mix according to the directions on the box.
  3. Layer the green chiles on the bottom of the casserole dish, then layer the chicken, rice/pasta mix, mushrooms, olives, cheese and sour cream (in that order) on top.
  4. Bake the casserole for roughly 15 minutes, then serve it in six even portions.

Aunt Helen's Sloppy Joes

What You'll Need:

  • 4 pounds ground beef
  • 1 medium onion (chopped)
  • 4 teaspoons salt
  • 1 green pepper (chopped)
  • 1 teaspoon pepper
  • 2 cups ketchup
  • 1 cup water
  • 1 tablespoons white vinegar
  • 4 teaspoons Worcestershire sauce
  • 4 tablespoons brown sugar
  • 4 hamburger buns

Cooking Instructions:

  1. Brown the ground beef in a large skillet, then drain the beef.
  2. Add the chopped green pepper and onion to the ground beef and continue to cook.
  3. In a separate bowl, combine the salt, pepper, ketchup, water, vinegar, brown sugar and Worcestershire sauce.
  4. Add the ketchup mixture to the ground beef, onion and pepper and let the entire combination simmer for 20 minutes.
  5. Serve the Sloppy Joes on hamburger buns and enjoy.
