Hearty Stew and Chili

There's nothing like traveling the road on a Louisiana adventure to destinations waiting to be explored and cooking campfire food along the way. With your RV equipped with everything you need to tickle the taste buds, the adventure is even more enjoyable.

Campfire Beef Stew

Prior to your trip, prep the veggies, cube the beef and place in plastic or freezer bags. Pick up a loaf of French bread or pre-made cornbread from the grocery store and you're good to go.

  • You'll need a Dutch oven or large cast iron pot with lid.
  • Defrost and brown the beef in a skillet in the RV or over the fire. Set aside.
  • Place carrots, celery, lots of onion, a dash of Worcestershire sauce, meat and salt and pepper into the pot.
  • Add enough water to cover the ingredients but not so much it will boil over.
  • Place the pot on a grate or use a hanging device and cook over a hot fire for approximately 2 1/2 hours. Add some flour to thicken the broth.
  • Do not let the fire hit the pan bottom.
  • Remove the lid using a heavy-duty pot holder and add cleaned and uncut small red potatoes.
  • Let the stew cook for approximately another 4 1/2 hours. Serve hot with crispy bread or cornbread.

Old-Fashioned Chili

  • Get the fire going really hot then let it burn down to smoldering hot
  • Clean and season a dutch oven or cast iron pot with oil
  • Add 2 lbs ground chuck
  • Add 1 -2 cut onions
  • Let the meat and onions cook slowly until the juices cook down
  • Add 1 can of red kidney beans (or another type if you prefer)
  • Add 2 cans of chili beans
  • Add 1 can of crushed tomatoes
  • Stir in one package of chili spice/mix
  • Optional: 1 can of sliced mushrooms and 1 diced fresh green bell pepper
  • If the chili is too dry, add a little liquid (water even a can of beer)
  • Stir
  • Place the cover on the pot and let the chili cook for an hour or so. Add any additional seasoning to taste.
  • Serve with saltine crackers or cornbread
